I used to get asked a lot – “What are you going to DO with yourself all day, now that you won’t be working??” This is what I did with myself yesterday. It was a productive day and I got more done than usual.
Good morning! What is in the email that we need to attend to?
Breakfast on the patio – tortillas, beans, salsa, papaya, mangoes, coffee. Joel had pancakes.
Some shopping and errands – this is the DoIt Center, like a Home Depot. You can buy pretty much everything for your house here!
We also stopped at the product market to stock up on our usual requirements. There should be a couple bunches of broccoli in there too.
Today I did a lot of cooking. The fridge was looking bare, and if I’m going to heat up the kitchen and spend time there, I may as well cook a number of things. There is salsa in the back pan, onions for beans in the front pan, and chicken soup in the pressure cooker.
Watermelon break! This is another very good one, and it tastes wonderful on a hot afternoon
Lets take a break from the kitchen and do a bit of Spanish homework. Today’s assignment – read the story, look up the words you don’t know and write sentences using them. There were a lot of new words in this story!
Back to the kitchen. Things are cool enough to put in the fridge – tortillas, salsa, beans, chicken soup, chicken meat for sandwiches or other dinners, baked chicken.
Hammock time! with more watermelon and my computer (I learned that it’s easier to deal with a book than a computer in a hammock)
Excuse the photo quality but it was dusk, and I just finished putting my new herbs in the planters I bought this morning. The pot in the background has this gorgeous plant with huge dark green/purple leaves that I got at a plant store. Along the wall you can almost see the variegated green and white plant we thought was dead, that now had two big healthy leaves and another sprouting.
Dinner on the patio – baked chicken, broccoli, chayote squash, Balboa beer. Joel also had some rice.
We have a set of DVDs of the TV show Ally McBeal which we have been enjoying in the evenings occasionally. Tonight we even had popcorn to go with it.
Checking email and relaxing a bit on the computer before bed.
Staying busy has never been a problem for me. There are too many things to get interested in. It definitely hasn’t been a problem in Panama!
Since cooking was part of my day, I’ll share
our favorite baked chicken recipe:
Put coconut oil in a baking dish. Add herbs (whatever you like – oregano, Italian seasoning, salt, pepper, etc)
Cut up your chicken into pieces (with or without skin, whatever pieces you like)
Roll the chicken in the oil and herbs to coat
Put grated Parmesan cheese on top
Bake at about 350 for 1 – 1 1/4 hours until done and starting to look a bit crispy. You don’t need to turn it or do anything except check it in about a hour.

Great you included your recipe! This post reminded be a lot of these quick read, fun and fictitious mystery books by Diane Mott Davidson. Her books are based on a character, Goldie, that is a caterer and always ends up solving some crime or murder when catering fancy parties. And while she is cooking and baking for the functions, Diane, the author, throws in the recipes throughout the book. Love it! Happy Easter! Enjoy your tomorrow 🙂

I loved Ally Mc Beal when it was on TV – very funny show.
I never find a lack of things either. Lately, it’s been a lot of yardwork to get that in good shape before putting the house up for sale. The winter was very hard on the plants this year. Of course the inside is next after we finish the yard. We only have a few things to address there. Today we are taking off to rest up from cutting heavy branches yesterday. Manual labior is a killer!
In the evenings David has been watching basketball playoffs and i’ve been doing my email and working on my book.
The weather is lovely now and we can open the windows every da,y which is so nice.

We haven’t watched Ally McBeal is long enough it’s almost like enjoying a new show for us. It sounds like you have been keeping plenty busy too. Good luck with the house. I know what a big project that is. Your book? How exciting!

Always too much to do at home, isn’t there? LOL! I also like to keep busy at home and it’s funny that most people think that we don’t have things to keep ourselves busy with. Great photo’s and thanks for sharing. I truly enjoyed. 🙂

The theoretical part of the school is over. It was pretty much a joke, actually. ANYONE could do it. It’s sort of pay your fee and show up on time for three days and you pass. They give you a book that has all the questions that might possibly be on the written test at the license bureau WITH the correct answers. I rode the scooter for a half hour last Thursday. I was supposed to do two hours today, but other things interfered, and the whole week is pretty much shot. I have to go to Hospital Chiriqui tomorrow and set up an appointment with my health program doctor who happens to be an internist. This is required because I’m over 70. I also have to try and set up an appointment with a dermatologist since I have some kind of jungle rot on my left hand and left foot that needs to be taken care of. But next week will be scooter time. Between the end of the classroom time it takes 15 working days for the ATTT to certify the school results and issue the diploma that you have to present to the bureau. So that all works out fine.
